Vitamin C, also known as ascorbic acid, was first isolated in 1928 by the Hungarian biochemist and Nobel Prize winner Dr. Szent-Gyorgyi. Vitamin C is a commonly used water-soluble vitamin. Although many mammals can produce vitamin C, humans must obtain vitamin C from foods and other sources. It's contained in high concentration in fresh fruits and vegetables, especially citrus fruits. However, vitamin C is labile, and the amount in foods can decrease significantly with cooking and storage.
Vitamin C has a role in several physiological functions. It is involved in tyrosine metabolism and is a cofactor in the synthesis of carnitine, and collagen. Vitamin C is also involved in a variety of metabolic processes including oxidation-reduction reactions and cellular respiration, carbohydrate metabolism, synthesis of lipids and proteins, catabolism of cholesterol to bile acids, conversion of folic acid to folinic acid, and iron metabolism. Vitamin C is probably best known for its effects as an antioxidant and its role in maintaining proper immune function.
